Happy Healthy Living Oven Roasted Vegetables

We eat a lot of vegetables and like to find different ways to prepare them. We usually eat them raw or lightly steam them but we wanted to try something a little different so we roasted them with a little olive oil and oregano. It turned out to be quite delicious so we wanted to share it. This oven roasted vegetables recipes has become one of our regulars. It is so easy to make and takes little time. 

Sometimes we run out of food that we have planned for meals and there are a bunch of unused veggies. Today we decided to gather what was left and make an oven roasted veggie dish. Here is what we found in the refrigerator: Broccoli, Red Peppers, Carrots, Zucchini, Garlic. Celery and Red Onion. The Zucchini was bad so we didn’t add it. Then we added oregano, salt and pepper.

Equipment

  • Over

Ingredients

  • 2 head broccoli
  • 1 large red pepper
  • 3 medium carrots
  • 3 stalks celery
  • 2 tbsp red onion
  • 2 cloves garlic
  • 1/2 tsp oregano

Instructions

  • Chop all veggies
  • Preheat oven to 425
  • Put veggies in a glass baking dish
  • Bake for 15 to 17 minutes or until tender
  • Add salt and pepper to taste

We cooked some rice in our Instant Pot and set the veggies on top. Added a little butter from our favorite grass-fed cows and we had a wonderfully healthy and delicious meal!
