Yogurt was actually the first fermented food I ever made on purpose, long before I started experimenting with sauerkraut and kimchi. It’s a nice place to start if fermentation feels a little intimidating, because the process is more forgiving than it sounds, and the ingredient list is short: milk, a little live-culture yogurt to get things started, and time.
If you’ve read my full guide to fermented foods, you know yogurt is one of the easiest ways to work more live cultures into your day. Homemade also tends to be thicker, tangier, and free of the added sugars and stabilizers you’ll find in a lot of grocery store containers.
Yogurt starts as milk and becomes yogurt when live bacterial cultures — usually Lactobacillus bulgaricus and Streptococcus thermophilus — are introduced and given a warm environment to multiply in. As they grow, they convert the milk’s natural sugar (lactose) into lactic acid, which thickens the milk and gives yogurt its characteristic tang.
All you’re really doing at home is recreating those warm, undisturbed conditions long enough for the culture to do its work.
I go through most of mine at breakfast — with fruit and a drizzle of honey, blended into a smoothie, or as the base for overnight oats. It also works well in place of sour cream in cooking, which is an easy way to work more of it into meals throughout the day.
