What Are Microgreens?

We are starting to learn about microgreens and finding the benefits of these little bite-size super nutritious greens. We use them in salads, smoothies, soups and more.

Microgreens are a vegetable green, harvested after sprouting as shoots, that are used both as a visual and flavor component or ingredient primarily in fine dining restaurants.

So basically micro greens are the very young version of different types of plants, normally harvested between 7 and 14 days after they are planted. The most popular one that I have seen are Mustard, Peas, Radish, Broccoli, Mizuna and Sunflower. But any plant can be grown as a microgreen.

We are starting with a salad mix and peas. The salad mix and the peas are easy to grow so we wanted to start simple as we increase our knowledge and skills for growing.

Why Are They So Popular?

You will find micro greens very often now in restaurants on top of that fancy salad or as a garnish for your favorite soup. The reason some top chefs are using them is that they taste great and look good. The nutritional value is a bonus for you.

Researchers have found that micro greens are 4 to 40 times more concentrated with nutrients that the mature version of the plant. Red cabbage has 40 times the amount of vitamin E and 6 times the vitamin C than the mature plant. This varies with the type of plant you are growing.

Where Do I Buy Them?

Since microgreens are so fragile and have a super short shelf life you have limited options. You can look for a local market that buys from local growers or you can grow your own.

We are growing our own and they are great! We just harvested our first tray of a salad mix and a tray of peas. They have a great flavor and are so easy to grow.

If you don’t have the time or interest to grow your own you can search for local microgreens farms and see where they are selling their products near you. Many local growers will deliver right to your door!
