Super Hero Power Snack

Healthy Power Snack

This is a great power snack with some wonderfully healthy benefits.

Ingredients:

  • 1 large grapefruit
  • 2 tablespoons chia seeds
  • 1 tablespoon coconut sugar (you can use other sweeteners, this just resonates with me)
  • 1 pinch of sea salt

Directions:

Roll your grapefruit on the counter a few times to loosen the juice. Cut the grapefruit in half and place in a bowl, loosen grapefruit meat with grapefruit spoon ( I use a fork since I don’t have a grapefruit spoon). Sprinkle chia seeds, coconut sugar and the pinch of salt over each half of grapefruit. Let sit for 15 minutes. Then enjoy your little grapefruit pudding. The chia seeds soak up the grapefruit juice and it becomes pudding like.

Why This is a Power Snack

What Grapefruit does for you: Grapefruit is a super source of nutrients that contribute to a healthy diet. It has Vitamin C and fiber, the red and pink hues contain beneficial antioxidant lycoprene. Studies have shown that grapefruit lowers cholesterol and with the low glycemic index it helps the body’s metabolism burn fat.

What Chia seeds do for you: Chia seeds will absorb up to 12 times their own weight and they expand to help curb your appetite. They contain omega-3 fatty acids and high amounts of omega-6. We all need these fatty acids to support our heart health, beautiful skin, hair and nails

What Coconut Sugar does for us: It is very sustainable. The coconut palm tree produces 50% to 75% more sugar per acre than cane sugar using only 20% of the resources. Coconut Sugar contains Nitrogen, phosphorus, potassium, calcium, magnesium, and vitamin C! Compared to other natural sweeteners like agave, honey and maple syrup it blows them away.

What Sea Salt does for you: Sea Salt is not refined so it still contains small amounts of iron, magnesium, calcium, potassium, zinc and iodine. A high grade sea salt will give you the highest levels of these trace minerals.
