Spiced up Cream of Vegetable Soup

Ingredients

  • cups chicken broth
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 large carrot diced
  • 1 stalk celery diced
  • 2 table spoons butter
  • ½ cup half & half cream
  • 1 tablespoon brown rice flour
  • ¾ cups shredded sharp cheddar cheese
  • ⅛ -1/4 teaspoon cayenne pepper more if you can
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt & Pepper to taste

Instructions

  • Place the celery, carrot and butter in a pan and sauté till tender about 3-5 minutes
  • Add in the corn, peas and brown rice flour
  • Slowly add in cream and stir constantly as the sauce thickens add in cheese and broth
  • Add your spices, cover and simmer for about 10 minutes.
