Marinated Mushroom Recipe

I love mushrooms… But I thought I didn’t love raw mushrooms. I wouldn’t even add them to salads raw. The texture and the taste didn’t do anything for me. Since I have been trying to incorporate more raw foods into my diet I thought I would give raw mushrooms a try. Hence our marinated mushroom recipe.

I knew eating them plain wasn’t going to do it for me. Marinating them was my best option. I found a few recipes and pulled them together to make them my own happy healthy raw mushrooms. The marinated mushroom recipe below can be made your own too if you have favorite spices you like to add.

We like to use button mushrooms or cremini mushrooms. These are the best ones to eat raw and the most common ones that you find in your local markets.

These are on the Italian spicy side, simple spice changes can make them Oriental, Thia, Mexican.. well you know what you like. You can add some spices from your own herb garden like cayenne pepper, thyme, basil, oregano and garlic.

This is so simple you will think,” that’s it? ” Just don’t leave out the 30 minute salt toss it’s a step that really makes them robust and fulfilling.

Happy Raw Marinated Mushrooms

Ingredients

  • 10 mushrooms
  • 1 TBSP sea salt

For the marinade:

  • 10 TBSP good olive oil
  • 1 TBSP apple cider vinegar
  • 1 garlic clove grated
  • 1 TBSP lemon zest
  • Pinch sea salt
  • Freshly cracked black pepper
  • A handful of fresh basil roughly chopped if you have fresh oregano add that too!
  • Optional: a pinch of red pepper

Instructions

  • Wash, scrub and drain the mushrooms. Pat them dry with a towel.
  • Place them in a colander atop a big bowl and sprinkle 1 TBSP sea salt. Toss to cover them all in the salt and leave them for about 30 minutes at room temp.
  • Rinse the mushrooms well to get rid of the extra salt and gently squeeze out as much of the water as you can without making a mash out of your mushrooms. Pat them dry with a towel.
  • In a bowl mix the ingredients for the marinade I do this while they are sitting in the salt. – Olive oil, vinegar, garlic, lemon zest, spices. Add the mushrooms and toss to cover them in the marinade.
  • Cover the bowl and put the mushrooms in the fridge for at least 30 minutes.
  • Enjoy chilled with your favorite raw crackers or wholegrain toasted bread. They make a great addition to salad too !

How To Make Raw Tortillas

Raw Food Recipe for Tortillas

This raw food recipe for tortillas is one of our first recipes to attempt. We are just beginning our education about a raw foods diet. The dehydrator that we got for the holidays is going to come in handy for this new exploration of ours. We are excited about sharing our new discoveries and love to hear about yours.

We are making green tortillas from this raw food recipe that we found from the Raw Food Diet Inspiration site. We created these raw tortillas from scratch. They are great for making raw vegan quesadillas, a simple veggie wrap or for rolling up enchiladas or burritos.

This is a great recipe that is fairly quick and easy. Just blend everything together and pour them onto teflex dehydrator sheets or baking quality parchment paper. Don’t make them too thick and you should have some yummy tortillas within a day.

Raw Tortillas

Ingredients

  • ½ green pepper or red pepper
  • ½ cup spinach
  • 2 carrots
  • 2 zucchini
  • 1 cup water
  • 2 avocados
  • 2 teaspoons lemon juice
  • 1 celery stick
  • 1 handful of fresh cilantro or parsley
  • 2 green onions

Instructions

  • Blend in blender.
  • Lastly add: 1 1⁄2 cup flax meal (3/4 cup flax seeds ground).

You can make them into any size tortillas that you like by putting the batter on non-stick dehydrator sheets or parchment paper and dehydrating on 95 to 105 degrees until they are no longer doughy. Make sure to turn them over when one side is done in about 6 to 9 hours.

Note: If they get to hard put them in a plastic bag and they should soften up.

These raw tortillas turned out well for us. We made some delicious wraps with homemade hummus and a great assortment of vegetables and sprouts.
